Braised Chicken Curry

Every now and then, a good curry dish has to be made to satisfy our exotic, taste cravings! 

Although there is a great variety of prepared Curry pastes and powders on the market shelves today, I always seem to go back to my favorite, Simply Organic Curry Powder. It’s made with Organic Coriander, Organic Turmeric, Organic Mustard, Organic Cumin, Organic Fenugreek, Organic Paprika, Organic Cayenne, Organic Cardamom, Organic Nutmeg, Organic Cinnamon, Organic Cloves...all the herbs and spices that help create the perfect, essential blend, that many countries in the world use to make flavorful dishes.

Makes 4 to 6 servings

Ingredients

  • 1 can of whole fat coconut milk
  • 1 cup of chicken broth, or water
  • 1-2 T curry powder (1 for mild, 2 for more spice, add more if spicier is desired)
  • 1 T tapioca starch
  • 2-3 pounds of organic chicken pieces
  • sea salt to taste 
  • fresh chopped cilantro and scallion to garnish (optional)

How To

  1. In a small bowl, whisk together the curry powder with coconut milk, broth, and tapioca starch. Whisk well to prevent lumps. Set aside.
  2. In a large skillet or Dutch oven, warm up 1 tablespoon of your choice fat. Arrange chicken pieces (skin side down) in skillet. On medium heat, sear chicken pieces for 5 minutes on each side. 
  3. Pour in curry milk. Stir everything to evenly distribute the curry milk. Cover with lid. Allow to simmer for 45 minutes. During this time, prepare your choice side dishes. 
  4. Transfer chicken to individual bowls, garnish with fresh chopped cilantro and scallion.
