Dairy-free Cheese Spread

I think I've spent a couple of hundred dollars now in my search for delicious, good quality, dairy-free cheese, and spreads, but honestly, it's a bit expensive to always keep them stocked in the fridge. I want cheese though, and like you, I want to be able to spread it on crackers and toast, so I decided to experiment with some of the existing dairy-free cheese recipes I found online until I got to the point of achieving something I was happy with. Yields 1 cup

Ingredients

  • 1 cup cashews, soaked in water for 2 hours, then drained
  • 2/3 cup of filtered water
  • Juice from 1 or 2 lemons (start with 1 lemon, if desired, squeeze in more)
  • 1 tablespoon of avocado oil (or grapeseed oil)
  • 1 teaspoon of onion powder 
  • 2 teaspoons of nutritional yeast
  • 1/2 teaspoon sea salt

How To

  1. Put ingredients into a food processor. Pulse until creamy and smooth. 
  2. Refrigerate in a glass container for up to 5 days.
