  • 2-3 tablespoons of your choice cheese (I use So Delicious mozzarella)
  • pinch of sea salt
  • fresh ground black pepper

How To

  1. Over low heat, melt butter and oil in a large skillet. Rotate skillet to evenly distribute fats. 
  2. In a glass jar, whisk eggs for 30 seconds. Add milk. Whisk for 30 seconds more. 
  3. Turn heat to medium-high. Pour half of your egg mixture into the skillet. Rotate eggs to evenly distribute. Tilt the skillet by lifting the handle. Use a spatula to push some of the egg towards the center of the skillet, allowing the runny egg mixture to fill in the gaps and cook. Repeat this a few time, as this will create the fluffiness in your omelette. Once all the runny egg is cooked, arrange cheese on top, and turn the heat off. 
  4. Roll your omelette onto your plate. Tilt skillet. Use a spatula to fold over ⅓ of the omelet. Use a spatula to fold the other side, and roll it onto your plate, creating a rolled omelette. Repeat the steps with remaining egg mixture. 
  5. Season with sea salt and black pepper, and garnish with toppings. Serve immediately.
