French Toast with Fresh Peach Sauce

Juicy, plump, sweet peaches helped take our GF French Toast into spectacular status, this morning! My luscious sauce poured onto custardy chunks of french toast is the perfect breakfast to make for your family this weekend. In addition to tasting so dang good, peaches are loaded with vitamin C, vitamin A, vitamin K, vitamin E, potassium, iron, magnesium, calcium, and phosphorous, too! 

This recipe makes two to four servings

This recipe is:

  • grain-free
  • dairy-free
  • soy-free
  • legume-free

Ingredients

For the Peach Sauce

  • 2 small peaches, peeled and pitted
  • juice from 1/2 of a small lemon
  • 1-2 tablespoons of maple syrup
  • 2 tablespoons your choice yogurt (the thicker the better!)

For the Egg Mixture

  • 2 whole eggs
  • 3 tablespoons of your choice milk (I use whole fat coconut milk)
  • 2 tablespoons of coconut sugar
  • 1 teaspoon of gf vanilla
  • 1/4 teaspoon of ground cinnamon
  • 2 slices of bread per person, cut into halves

How To

In a high-speed blender, blend all the peach sauce ingredients until creamy and smooth. Transfer to a glass jar. 

To make french toast, blend all ingredients, except the bread, in the blender. Pour egg mixture into a clean shallow bowl. Set aside for a few minutes.

Warm a large cast-iron skillet over medium to low heat. Warm 1 tablespoon coconut oil or ghee in the skillet. Dip bread slices into the egg mixture, saturating each piece. Cook each bread piece for 3 to 4 minutes per side. Repeat steps until all bread pieces are used. 

Plate french toast onto individual plates. Drizzle with peach sauce and serve immediately. 

Serve with:

  • Dairy-free Ice Cream or your choice ice cream
  • Fresh Fruits
  • Chocolate Sauce
