Lori's Anti-Inflammatory Summer Salad

Today I’m sharing my absolute favorite Summer Salad! Not only is it one of the most delicious salads, but it is also so beneficial for my body! It’s just the right amount of prebiotic fiber, anti-inflammatory, low-glycemic, hydrating and beneficial for my skin, is easily digestible and offers a variety of texture and flavor. You might be interested in learning about some of the ingredient benefits below.


Jicama, documented to be between 80-90% water, is a prebiotic, immune-boosting fiber, loaded with magnesium, potassium, and vitamin C. It’s also low carb and low glycemic!


Mango, a great source of vitamins C, A, and E, also contains iron, folate, b6, calcium, and zinc. Mangoes also contain antioxidants, are anti-inflammatory and provide aid in digestion.


Avocados, known as a heart-healthy fat, are abundant in potassium and are documented to help reduce blood pressure, balance cholesterol, fight inflammation, Alzheimer’s, and cancer.


My salad recipe makes 4-6 servings

 

Recipe for Lori’s Lime Vinaigrette

  • juice from 3 limes
  • ¼ cup of extra virgin olive oil
  • 1 tablespoon of maple syrup
  • sea salt and black pepper for taste

Ingredients for Lori’s Anti-Inflammatory Salad

  • 1 small jicama, peeled and chopped
  • 2 mangoes, peeled and chopped
  • 2 avocados, peeled and chopped
  • 1 small cucumber, seeded and chopped
  • ½ red onion, thinly sliced
  • 2 tablespoons of chopped fresh cilantro
  • 4-5 radishes, thinly sliced
  • 2-3 cups of your favorite lettuce

Optional ingredients include:

  • Sweet chili sauce
  • Cayenne pepper powder
  • Grilled chicken
  • Grilled shrimp

How To

  1. Combine vinaigrette ingredients in a glass jar. Whisk to combine. Chill in the refrigerator until needed. 
  2. Combine salad ingredients into a large bowl, drizzle with lime vinaigrette and serve immediately. You can eat as is, or serve with grilled chicken or shrimp!
