Quick and Easy Copper River Salmon Dinner

Sunday Dinner in 20 minutes! You know how much I love the prepped veggie bags from Trader Joe’s, and the seasonal Wild Copper River Sockeye at Costco is👌We seasoned the salmon with Sprinkle from Braggs and Selina Naturally Celtic sea salt, on a bed of TJ’s veggies! I hope you’ll give this nourishing and simple, heart-healthy recipe a try! I

Ingredients for Vegetables

  • 1 tablespoon of your choice fat (I use olive oil)
  • 1 bag of pre-chopped mixed greens (I use Trader Joe's Cruciferous Crunch)
  • 1 bag of Broccoli Slaw (I prefer Trader Joe's Broccoli Slaw blend)
  • 1/4 cup water
  • 2 teaspoons of Herbs de Provence 

How To

  1. In a large skillet, warm up 1 tablespoon of your choice fat
  2. Saute vegetables in the skillet for 3 minutes. Toss with a fork. Add the water, and cover skillet with a lid. Cook veggies down for 5 minutes. Sprinkle with Herbs de Provence. Remove lid and set aside. Prepare the fish.

Ingredients for Salmon

  • 1.5 pounds of salmon filet, preferably wild-caught, not farm-raised, cut into pieces
  • sea salt and black pepper to season, optional
  • 1 tablespoon of Braggs Sprinkle
  • 1 tablespoon of your choice fat (I use Cocavo)

How To

  1. Cut the salmon into 6 to 8 pieces. Season and arrange on a plate. 
  2. Warm oil in a large skillet over medium heat. Arrange 3-4 pieces of salmon in the skillet, skin side down. Keep at medium heat and cover for 3 minutes, then flip salmon pieces, cooking for 3 more minutes on the other side. 
  3. Transfer veggies and salmon onto individual plates.
