Raspberry Chocolate Squares

Birch Benders Paleo Pancake Mix has become a best friend in our kitchen! We cook 99.9% of our meals so having a little help from a premade mix has catapulted our creativity and created a competition between my husband and I to see who can whip up the 'Best Birch Creation!' We usually add an extra cup of almond flour and 3 eggs to build up the protein level, which also helps create fluffier results. Can you make these with 100% almond flour? Sure, but I like the bind and the stability that the Birch Benders blend provides. You can turn this batter into squares (as pictured), into bars, cupcakes or a cake! Enjoy these squares for breakfast, as a dessert, or snack!

Makes 24 squares

Ingredients

  • 3 whole eggs
  • 1/3 cup avocado oil (swap out ghee or coconut oil if preferred)
  • 1/3 cup milk (I use whole fat coconut oil)
  • 1/2 cup maple syrup
  • 2 teaspoons gluten-free vanilla extract
  • 1 cup almond flour
  • 1/2 cup Birch Benders Paleo Pancake mix
  • 1.5 cups raspberries (frozen or fresh)
  • 1/2 cup chocolate chips (plus 1/2 cup more if you want to melt and drizzle)

How To

  1. Preheat oven to 350 degrees. Prepare your cookie sheet or molds. 
  2. In a large bowl, whip eggs for 2 minutes, until fluffy. Add remaining ingredients. Whisk well to combine until a batter is achieved. Pour batter onto the prepared cookie sheet, into cupcake molds, cake pan, etc...
  3. Bake for 25 minutes. Remove from oven and allow to cool before cutting.
