Savory Sweet Potatoes with Cranberries and Almonds

This year I'm focusing on delicious, healthy and simple for Thanksgiving dinner. Everyone knows that the meal I make will be gluten-free, but I still want to make sure that flavors are abundant and enjoyable! This side dish is rich, filling, nourishing, and quick to make!

Serves: 4
Preparation Time and Cook Time: 30 minutes

Ingredients for sweet potatoes

  • 2 pounds sweet potatoes, peeled and cut into bite-sized chunks
  • 2 tablespoons of dried cranberries, or dried cherries
  • 1/4 cup sliced almonds

Ingredients for Herb Dressing

  • 1/4 cup of fresh chopped herbs (I used sage, thyme, and Italian parsley)
  • 2 tablespoons of extra virgin olive oil
  • fresh juice from 1/2 lemon
  • celtic sea salt and fresh ground black pepper
  • 1/4 cup dried cranberries, or dried tart cherries

How To

  1. Bring 8 cups of water to a rapid boil. Boil sweet potatoes for 15 minutes. 
  2. While sweet potatoes are boiling, prepare the herb dressing by mixing fresh chopped herbs with olive oil, lemon juice, seasonings, and dried cranberries. Set aside. 
  3. Drain sweet potatoes well. In a large hot skillet, saute potatoes in oil or ghee for about 3 to 5 minutes, just long enough to get a brown crispy color on some of the potatoes.
  4. Transfer to a serving bowl. Spoon in the dressing and toss evenly to coat. Can be served warm or at room temperature.
