Shrimp Pasta in Brothy Tomato Sauce

Summertime is wonderful because it gives us all the best tomatoes we’ve been waiting for all year long! Bright red, plump and juicy, locally-grown, delightful tomatoes! Here I made a scrumptious Shrimp Pasta in a brothy tomato sauce with arugula, chopped maters, garlic, and basil, using those beautiful, wild-caught Argentinian shrimp, from Trader Joe's. In this dish, I used white rice noodles, but you can use your favorite GF noodles or zoodles, and it will be equally delicious!

My recipe makes four servings and takes 25 minutes to prepare. 

This recipe is:

      • gluten-free
      • dairy-free
      • gum-free
      • legume-free
      • soy-free

Ingredients

  • 12-ounce package of gluten-free noodles, or zoodles, boiled and drained
  • 2 tablespoons your choice butter (I used Miyokos Creamery Euro Vegan Butter)
  • 2 tablespoons dry white wine, optional
  • 1 pound of wild-caught shrimp, peeled and deveined
  • 1 pound of fresh tomatoes, cut into bite-sized pieces
  • 4 garlic cloves, minced
  • 2 cups arugula or spinach
  • 1/2 cup basil leaves, torn
  • sea salt and pepper for seasoning
  • crushed red pepper flakes, optional

How To

Boil noodles. Drain well. Drizzle with olive oil to avoid sticking. Set aside.

In a large skillet, melt butter over medium to low heat. Once melted, add the white wine (if using), and the tomatoes. Simmer for 15 minutes on low heat. 

Add shrimp, garlic, and arugula. Cover the skillet with a lid. Turn heat off. The shrimp will cook quickly because the sauce is hot.  

Add the cooked pasta to the skillet. Use tongs to evenly coat the pasta with sauce. 

Distribute Shrimp Pasta to individual serving bowls. Season with sea salt and pepper. Garnish with fresh basil and/or crushed red pepper flakes.
