You can make them with ANYTHING you want! Adding oil to the water will actually strengthen and make the rice paper more pliable. You can soak 2-3 papers at a time. Shrimp Spring Rolls are the perfect summer food! Whenever I make these, I use the plump, wild-caught, Red Argentinian Shrimp from Trader Joe's because they are fleshy and sweet!   • 3 flesh plums (preferably red flesh inside), pitted and cut in half
  • 2 tablespoons of raw coconut nectar or maple syrup
  • 1-2 tablespoons of Umeboshi or Apple Cider Vinegar (start off with 1 tablespoon, increase if a more tart taste is desired)
  • 1 tablespoon of raw coconut aminos
  • 1 tablespoon of avocado oil

Ingredients for Spring Rolls

  • 8 rice paper wrappers (found in the Asian aisle of most markets)
  • 24 wild-caught shrimp, cooked (3 shrimp per roll)
  • 2 cups of thinly shredded red or green cabbage, raw or cooked
  • 2 carrots, peeled and grated
  • 2 medium cucumbers, cut into thin spears
  • 8 scallions, chopped
  • 8 romaine lettuce leaves, cut into half
  • 24 fresh mint leaves, washed and dried (3 leaves per roll)
  • 2 cups of fresh cilantro, washed and dried

How to make the Sauce

  1. Combine ingredients in a high-speed blender, and blitz until smooth and creamy. Pour sauce into a glass jar and set aside until needed. 

How to make the Spring Rolls

  1. Prepare all ingredients, placing each ingredient into small individual bowls. Set aside.
  2. Line a large cookie sheet with wax paper. Set aside. 
  3. Pour 6 cups of water into a large bowl. Add 2 tablespoons of avocado oil to the water and stir.
  4. Dip 2 rice paper wrappers into the water and allow them to soften for a few minutes. It will take a few minutes, but you can help it along by gently massaging the paper with your fingers. Once softened, bring it out of the water and gently squeeze out any liquid.
  5. Lay 1 soft rice paper wrapper on the wax paper. In the center of the rice paper, fill it with about 1/2 cup of ingredient variety. Fold over the sides first, then roll it up like a burrito. Repeat the steps until you have made all of the rolls. 
  6. Immediately serve the Shrimp Spring Rolls with fresh Sweet & Sour Plum Sauce.
