A&M Factory Restaurant in Malvern, Pennsylvania

by Melinda Arcara

Finding a gluten-free restaurant is hard, but finding a gluten-free, dairy-free, all organic, non-GMO, lectin free and sugar-free restaurant is like finding that needle in a haystack.  A&M Factory Restaurant in Frazer, PA is that needle, but so worth the search.

Tucked in the northwest suburbs of Philadelphia, in a nondescript strip plaza along route 30 (called the “Mainline”), A&M Factory doesn’t look like much on the outside, but as soon as you walk in the door, your eyes are drawn to its contemporary and rustic barn décor.  This seems like two opposite styles, but it works for anyone interested in opening a computer or to just sit comfortably and enjoy a conversation with a hot matcha latte.

The owners of A&M are the exact combination of their restaurant’s décor. Ashley Kessler and Slovakian immigrant, Maros (pronounced Maroosh) Hajduk are both incredibly smart and filled with health and business knowledge, as well as warm and engaging. Their personalities and knowledge are the perfect combinations to make this all organic, healthy food factory work in the tough Philadelphia suburbs where cheese steaks and pizza are king.

Ashley does follow a strict gluten-free, dairy-free, soy-free, sugar and lectin-free diet, and has a wide range of knowledge of the human body, nutrition and food sensitivities from her studies in college and from reading about different diets.  She stands by the fact that, “We don’t serve anything that isn’t healthy for you, or that I wouldn’t eat myself.”   Maros also commented that “We aren’t a bunch of granola eating hippies, we just want to make healthy food that is convenient and delicious.”

The menu is posted at the front counter when you walk in the door and includes such items as daily soups, sides, smoothies and smoothie bowls, sandwiches, salads and much more.  If you are looking for a healthy breakfast, there are twelve different smoothie and smoothie bowl combinations.  The Flamingo Lake bowl contained: apples, strawberries, mango, dragon fruit, banana, strawberries, and homemade coconut cream and for an additional charge, you can add Ashley’s grain-free (walnut/pistachio) granola.

When asked, Maros said his favorite item on the menu is the chicken and cassava flour waffles.  They are homemade grain free waffles, topped with Jamaican jerk chicken and maple syrup.  Ashley didn’t hesitate to recommend the cauliflower cheesesteak, which is made with roasted cauliflower, caramelized onions, homemade vegan cheese, and is served on a grain-free focaccia bread.  There are so many unique and delicious menu items to choose from for anyone that has a special food requirement or is just trying to eat better quality food for good health.

This, hidden treasure, won’t stay hidden for long as more and more Mainliners make their way over to A&M Factory restaurant for healthy and delicious food served fast.

About the Author

As the baby of ten children, I was nicknamed by my dad "Bebe", but my friends and family call me "Beeb".

I amazingly went through the first forty years of my life with lots of family love, support and humor but never felt healthy. I Suffered from unexplained symptoms including migraines, stomach pains, anemia, anxiety, weight fluctuations, and joint pain, and was finally diagnosed with a gluten intolerance in 2010.

For Me, this diagnosis was as a blessing, not a curse as I learned through trial and error how to be gluten-free and to finally feel better. I’ve recently completed a guidebook, 3 Steps to Gluten-Free Living, to help newly diagnosed gluten-intolerant patients save time, money, and energy by getting on a path to better health and to 100 percent gluten-free living for life!

It's the perfect book for newly diagnosed gluten-intolerant suffers who are left with the question..."Where do I start?"
