Artichoke and Shrimp Bruschetta

For lunches, I've been focusing on creating protein-loaded meals that can be quickly made. Because of a few projects that I need to have finished by the end of the month, I have to get in and out of the kitchen, and back to work in no time. Maybe you can relate? The combination of shrimp and artichokes is not only a combo full of flavor, but the health benefits should be recognized just the same!

Why wild-caught shrimp? Shrimp have zero carbs, are full of protein, potassium, magnesium, zinc, calcium, and iron. Shrimp also offer niacin, b-12, and iodine. The fiber found in artichokes can help maintain blood pressure levels as well as help lower blood sugar. Artichokes contain Cynarin which is said to increase bile production in your liver, helping to rid cholesterol from your body.

I love the idea of eating artichokes without having to clean, steam, and scrape them with my teeth, so Trader Joe's frozen bags of artichoke hearts are real life-savers when it comes to getting in a good fiber with a healthy and clean protein. You can make this recipe with grilled chicken or beef, but we enjoy how fantastic it tastes with shrimp. Makes 4 servings

Prep Time: 10 minutes

Ingredients

  • 1/2 pound shrimp, deveined (about 16 medium shrimp), cut into pieces
  • 1 bag of frozen artichoke hearts from Trader Joes (or a 14 oz can, drained), cut into bite-sized pieces
  • 1/4 cup sundried tomatoes, diced
  • 6 garlic cloves, minced
  • sea salt and pepper for taste (optional)
  • 6 fresh basil leaves, torn into pieces for garnish

How To

  1. Heat 1 tablespoon of fat (coconut oil, butter, ghee, etc..) in a large skillet. Saute shrimp, artichoke hearts, sundried tomatoes and garlic over medium heat, for 8 minutes. Season with sea salt and fresh ground black pepper. 
  2. Spoon onto bread, pizza crust, focaccia, flatbread or tortillas. Garnish with fresh torn basil leaves.
