BBQ Chicken and Veggie Bowl

When you need to make something to eat in less than 20 minutes, this is the meal you make! I use Aidells Artichoke & Garlic sausages and whatever veggies I have in the refrigerator, but cauliflower and zucchini are a must!

This recipe makes 4 to 6 servings.

Ingredients

  • 6 cups of chopped veggies your choice (can be zucchini, cauliflower, yellow squash, carrots, broccoli, chard, kale, onion, etc, etc...)
  • 4 gluten-free sausages of your choice, diced into bite-sized pieces
  • 1-2 cups of your favorite gluten-free bbq sauce (start with 1 cup and add more if needed)
  • 1/2 cup of chicken or veggie broth

* Add appropriate cheese to make it keto!

How To

  1. In a large skillet, pour in broth. Bring to medium-low heat. Add veggies and steam with the lid on for 8 minutes.
  2. Add sausages and bbq sauce to the skillet. Stir well to coat all ingredients with bbq sauce. Lower heat to a simmer and cook for 5 more minutes.
  3. Garnish with fresh herbs, scallion or sesame seeds if desired.
