Beanless Turkey Chili

Every so often I crave chili flavors and texture, but without the beans! This recipe is evidence of one of those phases, and getting in a nice variety of vegetables like cabbage and cauli, makes it even more attractive, so attractive, that I decided I needed to add this recipe to my life. I've made this recipe with ground beef, ground chicken, and as shown here, with ground turkey. Definitely tag me #glutenfreeglobalicious if you make this so I can see your delicious creation!

Provides 6 to 8 servings

Ingredients

  • 1 red onion, diced
  • 1 leek, chopped
  • 3 carrots, peeled and diced
  • 3 zucchini, diced
  • 3 yellow squash, diced
  • 3 cups of shredded cabbage
  • 2 cups of cauliflower rice
  • 1 pound of ground turkey
  • 1 large can of stewed tomatoes (24 oz to 32 oz)
  • 6 garlic cloves, minced
  • 4 cups of broth (chicken or vegetable works)
  • 2 T of chili powder
  • 1 tsp of ground cumin
  • 1/4 tsp cayenne pepper
  • 1 tsp of sea salt (optional)
  • 1 tsp of ground oregano
  • 1 tsp of smoked ground paprika
  • 1/2 tsp of ground coriander

Topping options

  • chopped cilantro
  • grated cheese
  • guacamole
  • diced avocado
  • sour cream
  • pickled red onions
  • fresh salsa
  • fresh salsa
  • crumbled plantain chips

How To

  1. In a large dutch oven or soup pot, saute onion, leeks, and carrots on medium heat for 10 minutes. Add in all of the remaining ingredients. Stir well. Simmer chili with the lid on, for at least 45 minutes to 1 hour.
  2. Ladle into individual serving bowls. Garnish with your chosen toppings. Serve immediately.
