Boniato Sweet Potato Salad

Why not have a Breakfast Picnic? White Korean Sweet Potato Salad with soft boiled eggs and avocado slices make a scrumptious meal!I'm not too fond of the orange sweet potato and yams, so I make sure to stock up on Boniato White Korean Sweet Potatoes every week. They also go by the name of Japanese Sweet Potato or Asian Sweet Potato. Sprouts Farmers Markets in California usually has them, as well as Asian grocery stores. If you can't find them, please do use the traditional orange. 

Makes 4 servings

Ingredients

  • 1 pound your choice sweet potato (white, orange, or purple), cubed
  • 2 tablespoons gluten-free, soy-free, canola free mayonnaise (I use Sir Kensington brand)
  • 1/4 cup diced red onion
  • 2 tablespoons diced scallion
  • 2-3 tablespoons pickle relish 
  • 1 tablespoon chopped fresh parsley
  • fresh ground black pepper

How To

  1. Boil potatoes for 15 minutes. Drain well. Transfer to a bowl. Chill in the refrigerator for 30 minutes.
  2. Add mayo, red onion, scallion and pickle relish to the potatoes. Stir to coat potatoes. Add more mayo if needed. Season with fresh ground black pepper. Garnish with fresh parsley.
  3. Refrigerate until you are ready to eat.
