You can never go wrong with Cauliflower Meatball Mac & Cheese! The meatballs are soft and plump, with creamy cauliflower florets, in a rich cheesy marinara sauce!...and it takes less than 30-minutes! It can be made for dairy-free people like you and me, who want to be able to indulge in some tasty, nourishing, meals!

Makes 4 servings

Ingredients
  • 1 large cauliflower, cut into bite-sized pieces, steamed for 8 minutes
  • 1 pound of bulk sausage (pork or beef), rolled into 1 inch meatballs
  • 2 cups of fresh spinach, torn into small pieces
  • 2 cups of your choice marinara sauce
  • 1 cup of your choice cheese (For my DF version, I use Miyoko's Vegan Mozzarella)
  • 1/4 cup chopped fresh parsley or basil
  • sea salt and black pepper

How To

  1. Preheat oven to 375 degrees.
  2. Bring 2 cups of water to a boil. Steam cauliflower for 8 minutes. Drain well and set aside.
  3. In a medium-sized baking dish, arrange the cauliflower, meatballs, and spinach. Pour sauce over everything and toss with a spoon to evenly coat ingredients. Top with your choice cheese. 
  4. Bake for 25 minutes. 
  5. Remove from oven, garnish with fresh herbs and season. Serve immediately.
