Add cauliflower, onion, and garlic. Cover with a lid. Cook for 8 minutes.\u003c\/li\u003e\n\u003cli\u003eDrain well. Set aside.\u003c\/li\u003e\n\u003cli\u003eMeasure out taco seasonings or blend spices.\u003c\/li\u003e\n\u003cli\u003ePlace cauliflower, onion, and garlic in a food processor. Add all remaining ingredients. Pulse until smooth and creamy. \u003c\/li\u003e\n\u003cli\u003eTransfer to a serving bowl or plate. Cauliflower Taco Dip

This Cauliflower Taco Dip is a spin off the traditional dip made with cottage cheese and a packet of McCormick taco seasoning. Not sure if you remember your Mom making this for all of your family events, but if you do, when was the last time you had it? Its been ages for me so this is why I created my dairy-free Cauliflower version. Nowadays, I take it to housewarming parties, baby showers and I'll definitely be making it for the 4th of the July!. 

Makes 4 to 6 servings

Ingredients

  • 1 large cauliflower, washed and trimmed, cut into pieces 
  • 1 whole small white onion, quartered
  • 3 garlic cloves, peeled
  • 1/3 cup sour cream or yogurt of your choice (I used So Delicious Dairy-free coconut yogurt)
  • 2 tablespoons of olive oil
  • 1-2 tablespoons of taco seasoning blend (or you can make your own with 1/4 teaspoon each of cumin, chili powder, paprika, dried oregano, sea salt)
  • Freshly squeezed juice from 1/2 of a lemon

How To

  1. In a medium skillet or stock pot, bring 2 cups of water to a boil. Add cauliflower, onion, and garlic. Cover with a lid. Cook for 8 minutes.
  2. Drain well. Set aside.
  3. Measure out taco seasonings or blend spices.
  4. Place cauliflower, onion, and garlic in a food processor. Add all remaining ingredients. Pulse until smooth and creamy. 
  5. Transfer to a serving bowl or plate. Garnish with your chosen crudites or chips.
  6. Chill before serving.
