Chef Diana, New York

by Lori Miller

My interview with Chef Diana wasn't an interview at all. It was like two old friends having a talk after years of not seeing each other. To say that Chef Diana is inspiring or motivating in an understatement! Raised in Connecticut, she originally set out to be an actress, but found herself attening the Natural Gourmet Institute in New York City after she was diagnosed with Mulitple Sclerosis, twenty-four years ago when she was just twenty-five years old. She enrolled in the Culinary program as a way to learn how to take care of and nourish herself.

Since then, Chef Diana has maintained a mostly Paleo diet because eating wheat, dairy or sugar can trigger numbness or pain in her body. She says her body will let her know when she's gone off track and she's quick to get back to eating gluten-free, etc...

Diana formed her company, This Pie is Nuts (TPIN) five years ago and had received nothing but praise. She now sells mini fruit pies, granola and individual boxed pie squares to local businesses in NYC. All of her products are Certified Vegan, Certified Paleo and Gluten-free. Her Paleo granola can be ordered online and shipped nationwide.

In her free time Diana likes to spend time with her family and friends. She also enjoys the theater. Last summer she took a few months off and joined the cast of Chapter Two, in Phoenix, Arizona, directed by the actress Marsha Mason. Chef Diana demonstrates perseverence, resilience and hope. It was a pleasure to connect with her.
