Suleyman Engin, Turkey

Interview with Gluten-free Chef Suleyman Engin from Istanbul, Turkey

by Lori Miller

We were able to connect with Gluten-free Chef, Süleyman Engin in Istanbul Turkey. He was one of the first Chefs to pioneer Celiac Awareness by introducing gluten-free cuisine to his country of Turkey in 2010. We appreciate his willingness to share his story.

GFG Mag: Do you live a gluten-free lifestyle? Do you have Celiac Disease or Gluten-Intolerant or is it your lifestyle choice to be gluten-free?

Chef Süleyman: First of all, I want to say Hello to you and all of your readers. I do not have gluten intolerance. I do not have Celiac Disease. I am a chef who decided to take a voluntary step to improve the quality of life for all Celiac patients in the world, starting from my own country. I want to spread awareness in every city and every country, that I visit.

GFG Mag: What is the gluten-free environment like in Turkey? Is it easy to find gluten-free restaurants or food ingredients?

Chef Süleyman: In 2010, the gluten-free movement was a foreign idea here in Istanbul, Turkey.  In the past eight years, I've worked with Celiac associations on many projects to develop Celiac Awareness. As awareness grew, the level of interest increased as well. Because of this, it has become unproblematic and more accessible to find gluten-free food. I am delighted to have been a part of this.

GFG Mag: Do your local restaurants offer gluten-free menu options?

Chef Süleyman: Yes, our local restaurants offer gluten-free options. We have restaurants that are entirely gluten-free. About this history, gluten-free recipes and menus were introduced in 2010. Unfortunately, there were not many chefs who contributed to fueling our local gluten-free movement because sadly, Turkey's first gluten-free chefs and activists were small in number. Since then, Gluten-free Chefs have increased. I worked to distribute menus to Culinary associations as a Volunteer Community Activist. I volunteered to give gluten-free cooking classes and training. Since then, many restaurants started to offer gluten-free options. If you examine Turkish cuisine, you will realize that almost 50% of Traditional Turkish cuisine is naturally gluten-free. Becuase of the many projects, I have developed over the years, many other chefs have introduced the gluten-free options of Turkish cuisine.

GFG Mag: What made you decide to become a GF Chef? Did you attend individual classes or courses to learn gluten-free cuisine? Did you attend a Culinary School? If yes, what training did you receive?

Chef Süleyman: There are many doctors in my family. By taking factual information about Celiac Disease from doctors, online research and working with food specialists, we extracted exact information to spread awareness. I decided to become a gluten-free Chef during my 18th year in business. Luckily, with my background, it was not difficult for me to transition into a gluten-free chef. So far, I have trained nearly 60 students in gluten-free chef cuisine.
However, with the assistance of the gluten-free information manual I created, thousands have been educated on Celiac Disease in government-funded projects and training across Turkey.

GFG Mag: What are some fun things you like to do when you're out of the kitchen, on your days off?

Chef Süleyman: I do many nature sports. You can find me paragliding, diving into the sea, hiking, and mountain climbing. Although, wherever I go, gastronomy and a gluten-free lifestyle are my primary interests.
