Ingredients for Tomatillo Salsa

  • 2 pounds of tomatillos, husks removed
  • 1 anaheim chili (optional, omit if you prefer a mild flavor)
  • 1 white onion, halved and peeled
  • 3 garlic cloves
  • 1/4 cup fresh cilantro
  • 1/2 teaspoon of sea salt

How To

  1. Preheat oven to 400 degrees.
  2. Rub oil on the tomatillos, chili, onion, and garlic, and then arrange them on a baking sheet. Cook for 30 minutes on top rack of oven. While the tomatillos are doing their thing, proceed with the preparation of the other dishes. 
  3. Remove ingredients from the oven. Cut the chili down the middle, and with the back of your knife, scrape out the seeds and discard. Transfer the ingredients to a high speed blender. Add cilantro and salt. Blend until a smooth puree is achieved. 

 

Ingredients for Chicken Sausage

  • 1 pound ground chicken
  • 1 teaspoon of ground garlic powder
  • 1 teaspoon ground herb blend (I use Braggs Organic Sprinkle)
  • 1/8 to 1/4 teaspoon ground cayenne pepper (less for mild heat)
  • 1/2 teaspoon of sea salt

How To

  1. Combine ingredients in a large bowl. Use your hands to form small patties.
  2. Arrange patties on a baking sheet. Cook for 20 minutes on the bottom rack of the oven, while the tomatillo salsa ingredients are cooking. 

 

Ingredients for Sweet Red Cabbage

  • 2 tablespoons of your choice oil (I use coconut oil)
  • 1 small red cabbage, finely shredded
  • 3 tablespoons of apple cider vinegar
  • 2 to 3 tablespoons of maple syrup
  • 1/4 cup of your choice stock, broth or water (I use chicken stock)

How To
