My Curried Butternut Squash Risotto topped with zucchini, sage, caramelized mushrooms, chives, and bacon, is the perfect, cozy, feel-good meal! Altogether, everything tastes so pleasing! Ingredients

  • 1 small yellow onion, diced
  • 2 tablespoons of your choice butter or ghee (I use Miyoko’s Creamery Vegan Butter)
  • 1.5 cups Sho-Chiku-Bai Sweet Rice, soaked for at least 2 hours, rinsed and well-drained
  • 4 cups chicken stock (vegan stock or water can also be used)
  • 1 cup butternut squash (I use Farmer's Market Foods)
  • 1 cup of coconut milk (I use Native Forest Simple
  • 1 tablespoon maple syrup
  • 2-3 teaspoons gf curry powder (use this amount for a mild flavor, 1-2 tablespoons for a stronger flavor)
  • 1/2 teaspoon sea salt 

How To

  1. Rinse and drain the rice.
  2. In a large skillet, melt butter over medium heat.
  3. Saute diced onion for 3 minutes. Add rice and stir for a few seconds to coat the rice with butter.
  4. Pour in remaining ingredients. Stir well to thoroughly mix ingredients. Cover skillet with a lid. Reduce heat to simmer for 20 minutes. Turn heat off and allow the risotto to sit for 10 minutes. Fluff up the risotto with a fork. Serve as is, or top with your favorite ingredients.
