Eggs in Marinara with Greens

I’ve made this for breakfast, lunch, and dinner, and it’s ALWAYS pleasing! It’s a Shakshuka-inspired dish made with Trader Joe's Cruciferous Crunch, their No-salt-added Marinara Sauce (I like to add my own Selina Naturally Celtic sea salt), Costco's Organic Pastured Eggs, and Miyoko's Creamery Vegan Mozz melted on top. So good and it only takes 15-minutes to make!

Makes 2 to 4 servings

Ingredients

  • 2 cups of Cruciferous Vegetables (or a mix of kale, cabbage, chard, etc...)
  • 1 cup of marinara sauce
  • 1 cup of chicken broth
  • 1/2 teaspoon of ground oregano, dried
  • 4 eggs, whole
  • 1/2 cup of your choice cheese, shredded
  • fresh chopped herbs for garnish

How To

  1. In a medium-size skillet, bring 1/4 cup of water to a boil. Add the 2 cups of vegetables and steam for 8 minutes. Drain any excess water. 
  2. Pour in the marinara sauce and chicken broth. Season with ground dried oregano. Stir well to combine.
  3. Crack eggs into sauce. Top with shredded cheese and cover. Allow to simmer for 5 minutes. Garnish with fresh chopped herbs. 
  4. Enjoy with tortillas, bread slices, dosas, or whatever you desire!
