Grass Fed Bolognese with Veggie Ribbons

Want to indulge in a nourishing clean meal in less than 20-minutes? Here's a simple one you can make with zero problems and still impress people! Want a variation? Swap ground grass-fed beef with ground lamb, shredded chicken, or stay vegan. 

Ingredients

  • 1 onion, diced
  • 4 garlic cloves, minced
  • 1 pound ground meat of your choice
  • 3-4 cups of marinara sauce (I use a jar of Trader Joe's No Salt Added)
  • 4 zucchini
  • 2 yellow squash
  • 3 carrots, peeled
  • 2-3 tablespoons of your choice herbs (I use basil, parsley, or rosemary)
  • sea salt and fresh ground black pepper 

How To

Use a potato peeler to prepare veggie ribbons. Create ribbons by repeating a peeling motion, going horizontally across the zucchini, squash, and carrots. Set ribbons aside.

In a large skillet, warm oil over medium heat. Saute onions and garlic for 5 minutes on low heat. Add your choice ground meat and cook over medium heat.  Occasionally stir to avoid burning. Use a wooden spoon to break up any meat clumps. Add marinara sauce. Simmer for 10 minutes. Turn heat off. Add in veggie ribbons. Drizzle with more olive oil if desired. Garnish with fresh herbs and parmesan if desired. Season with sea salt and black pepper.
