Grilled Zucchini with Pork Panko and Tomato Basil Chutney

In this recipe, I've grilled zucchini and topped it with a Spicy Thousand Island Dressing, the delicious and light Pork Panko from Bacon's Heir, and a homemade Tomato Basil Chutney! Guys, this recipe is unbelievably easy to make and it makes one of the BEST summer side dishes. You can either grill or cook stove top in a large skillet. Spicy Thousand Island Dressing

  • 2 tablespoons of mayonnaise
  • 2 tablespoons of gf ketchup
  • 1 tablespoon of pickle relish
  • 1/4 - 1/2 teaspoon of cayenne pepper

Tomato Basil Chutney

  • 10 basil leaves, chopped
  • 10 cherry tomatoes, small diced
  • 1 shallot, diced
  • 2 scallions, chopped 
  • juice from 1/2 lemon
  • 2 tablespoons of olive oil

Zucchini

  • 1-2 zucchini per person, horizontally halved
  • 1 tablespoon of your choice fat
  • sea salt and black pepper, to season (optional)
  • Pork Panko (optional)

Make the Dressing

  1. Combine ingredients in a small bowl. Whisk to combine. Chill until needed.

Make the Chutney

  1. Combine the ingredients in a small bowl. Stir to combine. Chill until needed.

Make the Zucchini

  1. Prepare your grill or a large skillet on the stove top, over medium-high heat.
  2. Rub your choice of fat on the zucchini halves. Once your grill or skillet is hot, arrange zucchini on the surface and cook for 3-4 minutes on each side. 
  3. Transfer zucchini to a clean serving plate. Garnish with the Thousand Island Dressing, Pork Panko, and Tomato Basil Chutney!
