Ingredients for Little Chocolate Snack Cakes

  • 3 whole eggs
  • 1⅓ cup your choice milk (I use unsweetened almond milk)
  • ½ cup of your choice fat (I use avocado oil)
  • 1½ cup almond flour
  • 1¼ unrefined coconut sugar
  • ½ cup white rice flour
  • ⅔ cup cocoa powder
  • 1 teaspoon gf vanilla extract
  • ½ teaspoon of gf baking powder

 

How To

  1. Preheat oven to 350°F. Spray or lightly grease your cupcake pan, or insert with cupcake liners. 
  2. In a high-speed blender, add all ingredients listed in order. Blend for 30 seconds, or until a batter is achieved. Pour the batter into the prepared bake pan. Bake for 25 minutes or until a toothpick comes out clean when inserted. While cooling down, make the frosting.

 

 

Ingredients for Chestnut Frosting

  • 1 pound roasted/steamed/boiled and peeled chestnuts (2-3 pouches)
  • 3/4 cup coconut nectar (can use date syrup or maple syrup)
  • 1/2 cup almond milk
  • 4 tablespoons dairy-free butter (I use Miyokos Creamery Vegan Butter)
  • 2 tablespoons cocoa powder

How To

Combine ingredients in a high-speed blender. Process, using your machine's tamper to help blend, until a smooth and creamy frosting is achieved. Transfer frosting to a pastry piping bag and set aside until ready to decorate cakes with. Decorate with frosting and your choice of garnish.

Cupcakes will keep in the refrigerator for up to 5 days.
