Mochi Pancakes

  • 1 teaspoon of baking powder
  • pinch of sea salt (optional)


You will need a few teaspoons of oil for cooking the pancakes.

Combine eggs, milk, maple syrup and vanilla extract in a large bowl. Whisk together. Add all of the dry ingredients and whisk again until all ingredients are combined. Heat a large cast iron skillet over medium heat. Set batter aside, allowing it to thicken for a couple of minutes.

Warm up a few teaspoons of your chosen fat in the skillet. Measure out 1/4 cup of the batter for each pancake, cooking 3 small to medium pancakes at a time. Allow the pancakes to cook for 2-3 minutes on each side. 

Top with your favorite fruits, yogurt, syrups, etc!
