An Inspiring Interview with Ducks & Dragons Bakery Owner, Mina Makram in San Francisco

by Lori Miller

We've all been in a tight spot at some time or another in life.  Stress has crept on us from a failed marriage, out of reach goals, financial challenges, health scares, etc.. It's during these times in life when we learn about ourselves, having to decide to give up or to persevere. If you can relate, you won't want to miss reading Mina Makram's story! His life experience is one you'll remember whenever you're tempted to throw in the towel.

Mina, who has an engineering background, was once over 400-pounds, but in 2012, realized he needed to make drastic changes for health reasons. From 2012 to 2015, while he was working for General Electric, he developed a few bread recipes that helped him transition into a low carb, paleo, ketogenic diet. Through food changes and exercise, he successfully shed half of his body weight which gave him an entirely new outlook on what he could achieve in life. Mina left GE to join a Silicon Valley startup but was let go from his position, finding himself with minimal financial resources.

Mina had no savings, he was low on cash, and almost on the brink of being homeless. He needed a way to survive, so he took all the money he had left to buy the first round of ingredients, to rent a commercial kitchen, purchase supplies and get the required permits needed to sell his bread at local farmers markets. Up until this point, Mina had only been baking for himself, and a few neighbors, but he chose to persevere!

He acquired all the necessary permits and started baking bread at his new Ducks and Dragons Bakery selling it at his local farmers market. Since only a few people had tasted his bread, I asked him if he was nervous about not knowing whether his bread would sell or not. Mina replied, " When your back is up against the wall, you find out what you can do." The folks at the commercial kitchen told him he was out of his mind, that nobody would pay the prices he was asking for, no matter how good his gluten-free bread tasted. Mina replied with, "I'm not going to listen to you." Luckily his bread sales were successful otherwise he could have ended up on the streets.

When demand for his bread increased, Mina was able to leave the shared rental kitchen behind to acquire his own 100% dedicated gluten-free kitchen. He was pleased in being able to do so because he would no longer have to worry about the risk of cross-contamination. Once sales grew, he set his sights on selling his bread wholesale, to increase brand recognition. In the beginning, stores were reluctant to add his bread into their inventory, but Mina would visit stores until they agreed to at least taste his bread. Currently, Mina runs Duck & Dragons Bakery with his girlfriend Kim Sullivan, and their bread is now in four grocery stores in the S.F. Bay Area, and on Good Eggs online market. While other bakeries also have their loaves of bread in local store chains, their bread gets stored in the freezer section. Duck and Dragons brand is the only local bakery to make daily deliveries of fresh paleo bread to grocery stores, but it's not in the frozen section. It's on the shelf!

The Ducks & Dragons Bakery started with five bagels and two baguettes. Today they also bake Dinner Rolls, Cookies, Pizza Crust, Sandwich Loaves, Banana Bread, Tortillas, and Brioche Hamburger Buns. Their Best Sellers are their:

  • Cheese Bread
  • Chocolate Bread
  • Zatar Bread Rolls

When I asked Mina what his future business plans were, he said a brick and mortar location was definitely in his sights! You can find Ducks and Dragons bread at the following stores and farmers markets:

  • Palo Alto Farmers Market on Sundays
  • Sunnyvale Farmers Market on Saturdays

In closing, I asked Mina which of his creations were his favorite. He was quick to say, "My Cheddar Cheese Rolls, Salted Coffee Brownie Cookies, and Zatar Rolls. Most people fail on diets because they don't enjoy the food. They turn a cheat day into a cheat month, but when you have good healthy options, you won't want to cheat."
