Pecan Praline Macaroons (Egg-free)

Makes 12 small cookies

Ingredients

2 cups of unsweetened shredded coconut
1/4 cup almond flour
1/4 cup coconut sugar
2 tablespoons chopped pecans (or your choice nut)
2 tablespoons coconut milk
1/8 teaspoon sea salt
1/4 cup of palm shortening (coconut oil or ghee can be used)
1/2 teaspoon almond extract (optional)

How To

Preheat oven to 350 degrees. Line cookie sheet with parchment paper or lightly grease. Mix all ingredients in a bowl. Use a small ice cream scoop to drop mixture onto the prepared sheet, spacing about 2 inches apart. Bake for 15 minutes. Allow cookies to cool before eating.
