Tuesday, September 4, 2018

I really wanted to make pancakes, but needed to create something other than our usual faves of blueberry or pumpkin. The idea of pink and white (and green!) pancakes, instantly came to mind! I decided to use Birch Bender Paleo Mix as the base, but amped-up the protein value (my guy was heading out for a 6+ mile hike), so I added almond flour and two eggs to the batter, which also gave extra fluff! Beet Powder and Matcha Green Tea Powder worked perfectly to psychologically satisfy my pretty pancake need. You can use one or both colors. Personally, I am not able to consume Birch Blenders Paleo Pancake Mix because of whatever type of cassava flour is used, plus their addition of baking soda (gives me horrible acid reflux), but thankfully, my husband is a trooper and always willing to try my colorful foodie ideas!
