Refreshing Summer Salad

July 2019

Fresh, healthy, and easy gluten-free are the requirements for my kitchen, and this chunky chopped salad fits our needs. Taking my inspiration from the Israeli salads I enjoyed in Tel Aviv and throughout Israel, a few summers back, I decided that I'd gather some of our delicious, locally-grown tomatoes, cucumbers, and avocados and turn them into this mouthwatering little meal. My husband enjoys his with crumbled feta cheese, so if you can have dairy, please don't cheat yourself and add it, too!

Not only is it incredibly tasty, but all of the ingredients are healthy. After you read about a few of their benefits, you will want to eat this salad often! As you go down my ingredient list, you'll see Sumac (get the info below), but this salad can be made without Sumac, and I guarantee, it's delicious just the same!

Cucumbers, as we know are anti-inflammatory and hydrating. Yes, this makes them very powerful, but continue reading to find out how much more they offer the human body. They contain a flavonol called fisetin that is said to prevent nerve cell decline and helps prevent memory decline. Overall, cucumbers can help prevent chronic disease in the body and brain.

Avocados, known as a heart-healthy fat, are abundant in potassium and are documented to help reduce blood pressure, balance cholesterol, fight inflammation, Alzheimer’s, and cancer.

Sumac, a spice used in Mediterranean cooking made from crushed red Sumac berries that are native to the Middle East, is inherently antibacterial, and high in vitamin C. It gives a tart flavor to foods that can be used in place of lemon. Sumac, which boasts a gorgeous deep red color, is listed as a superfood, is high in antioxidant properties, and is also anti-inflammatory, said to ward off coronary heart disease, and have a positive effect on diabetes patients. Sumac can be found in most Mediterranean markets, or on Vitacost.com
