Roasted Veggie Platter with Creamy Cranberry Dressing (Dairy-free)

I love the idea of always having loads of veggies for our dinner guests, but this year, I decided to go with a Roasted Veggie Platter and created a luscious Creamy Cranberry Dressing, to generously drizzle all over it! Using traditional ingredients (cranberries) to make something different and delicious, will impress your guests! 

Serves: 4
Preparation and Cooking Time: 30 minutes

Ingredients for Roasted Veggies

  • 8 baby carrots, trimmed (peeling is optional)
  • 4 zucchini, cut into bite-sized pieces 
  • 1 large cauliflower, cut into bite-sized pieces
  • 1-2 tablespoonful of oil or ghee for drizzling on veggies
  • 2 tablespoons of fresh chopped herbs for garnish (I used parsley, chives and thyme)
  • celtic sea salt and fresh ground black pepper to taste

Ingredients for Cranberry Dressing

  • 1 cup cranberry sauce (freshly made or canned)
  • 1/4 cup yogurt (I used Kitehill dairy-free plain yogurt)
  • 1 tablespoon of maple syrup
  • 1 tablespoon of extra virgin olive oil

How To

  1. Preheat oven to 400 degrees. Arrange veggies onto a prepared cookie sheet. Drizzle with oil or melted ghee. Cook for 25 minutes. While veggies are cooking, prepare the Cranberry Dressing.
  2. Use a high-speed blender to blend the cranberry, yogurt, maple syrup and extra virgin olive oil, until smooth and creamy. Set aside.
  3. Remove veggies and allow them to cool for at least 10 minutes. Season with sea salt and black pepper. Transfer veggies to individual plates or serving tray. Drizzle with prepared dressing. Garnish with fresh chopped herbs.
