Rustic Polenta (Corn-free and Dairy-free)

This Stove-top Braised Garlic Chicken on a bed of the most delicious, corn-free Polenta, turned out to be a fabulous meal! I’ve tried and tried, and tried again, but my bod just won’t accept corn, but I’m super happy to be able to dig into, and share this comforting Polenta alternative!

I made this with Cream of Rice, low-sodium, organic chicken stock from Imagine Foods, dairy-free Cheddar Shreds from So Delicous, and that magnificent vegan butter from Miyokos Creamery.   1. In a large skillet, pour in the chicken stock. Bring stock to a boil, then turn off the heat.

Keep doing this same movement until all of the rice is in the stock. Whisk to break up any clumps. Immediately add the cheese and butter. Whisk again to fully incorporate. Season with salt and pepper, and drizzle with extra virgin olive oil, if desired. Serve immediately with your favorite protein and veggies.
