Sana Locura Gluten Free Bakery, Madrid

by Kiley Griffin

I recently had the opportunity to revisit one of my favorite gluten-free places in the whole world!. Sana Locura is a 100% gluten-free cafe and bakery that opened in 2015 in Madrid when I was living there for the summer. Their baguettes were life-changing, and it was the first time I felt like I was eating a real piece of bread in years! The flavor and texture are fantastic! As you can guess, I ate a lot of their goodies over the course of the summer! Sana Locura products are baked freshly on site each day, ready to eat as they are. The plan to enjoy the bread with cheese gets tossed out by the reality of wanting to eat them immediately!

Once again in Madrid, I made sure to visit Sana Locura to indulge in some of their treats. Upon walking in you're mesmerized by glass cases filled with pastries, both sweet and savory. There is also a display of the freshly baked artisanal gluten-free bread ranging from baguettes to sandwich bread, with the ingredients listed. This visit, I chose a croissant and a chocolate covered donut. This bakery cafe also has excellent coffee. Prices are very affordable. The donut was one Euro, a little more than one US dollar and a baguette is 1.20 Euros, less than 1.50 US dollars. I also picked up a few items to get me through my next day of travel. Pizza, bread and Pan Au Chocolat were all delicious and perfect foods to eat after dealing with airport chaos. Everything was terrific, but there wasn't enough time to taste test all of it!

The staff is friendly, attentive and they speak English. The owner was not there this last visit, but I remember talking to him several times a few summers ago. The key to many of their gluten-free bread is that they ferment the dough to get the perfect complexity and taste. All their products get baked on site inside their dedicated gluten-free kitchen, attached to the bakery. You can peek through the windows to capture glimpses of the bakers at work. You know it's a standout place when it's filled with people who are not gluten-free. It’s that good!

Sana Locura, located north of Retiro Park in the Salamanca neighborhood of Madrid, is full of upscale shops and restaurants and worth a wander.  You can also take a quick metro trip from Centro. The closest stop is Diego de Leon. It is very much a neighborhood place that happens to be gluten-free, feeding both Celiacs and gluten-free eaters. I will always look forward to spending time in Madrid so I can eat as much as possible from Sana Locura!
