Sopa de Fideo

Have you eaten Sopa de Fideo before? My Nana taught my Mama to make it as a child and naturally, she taught me. It is such a rich, flavorful, and simple Mexican soup, and here I made a GF version with my favorite rice Vermicelli from World Market, in a tomatoey based chicken broth, with small sparse chunks of ground beef, onion, chili, and a squeeze of fresh lime. Makes six servings

Cook Time: Less than 45 minutes to make

Ingredients

  • 2 -3 blocks of rice vermicelli noodles, boiled and drained
  • 1 tablespoon of avocado oil (can use ghee or olive oil, too)
  • 1/2 small yellow onion, diced
  • 1/2 pound of ground grass-fed beef, or chicken
  • 1/4 cup of tomato paste
  • 6 to 8 cups of chicken broth (preferably homemade)
  • sea salt and fresh ground black pepper to season
  • fresh chopped cilantro for garnish
  • 4 fresh limes, cut into wedges
  • salsa or chili paste to spice it up

How To

  1. Boil vermicelli, drain and set aside.
  2. Warm oil in a large skillet. Saute diced onion on medium heat for 10 minutes. Add your choice meat, and cook for 5 minutes. Break up any large clumps. 
  3. Pour chicken broth into a separate pot. Add the tomato paste and use a whisk to combine. Pour the tomato broth into the skillet with the onion and the beef. Simmer for 25 minutes. Stir well. Season with sea salt and pepper. Add vermicelli. Stir well. 
  4. Fill individual bowls. Garnish with cilantro and lime. Be sure to remind your eaters to squeeze in the fresh lime juice!
