In the summer months, I always use the toaster oven to avoid heating up the house.\u003c\/li\u003e\n\u003cli\u003eMake sure to soak and rinse seeds and nuts, because they are usually very dirty with dust or dirt particles. Once soaked, rinsed and well drained, arrange them in a baking sheet. Put the baking sheet into the oven for 8-10 minutes, or until toasted and golden in color.\u003c\/li\u003e\n\u003cli\u003eTurn off heat and remove from oven. Drizzle the seeds with maple syrup and sweet chili sauce. While seeds are still hot, toss with a small spatula or spoon to get all the seeds evenly coated. Return to hot oven for 10 more minutes, but without turning the oven on. Cool down. Garnish with fresh lime zest. Sweet Chili and Lime Seed Mix

My husband made this creation so he could have something to snack on while we take on different Netflix series in the evenings! Sometimes he varies the seasonings. Sometimes he makes it with lemon pepper, other times with Herbs de Provence and grated Parmesan cheese! I happen to love this blend of flavors the best. 

Ingredients

  • 1/2 cup walnuts, raw and unsalted
  • 1/2 cup cashews, raw and unsalted
  • 1/4 cup pepitas (pumpkin seeds), raw and unsalted
  • 1/4 cup sunflower seeds, raw and unsalted
  • 1 tablespoon maple syrup
  • 1-2 tablespoons gluten-free sweet chili sauce
  • zest from 1 fresh lime

How To

  • Preheat oven or toaster oven to 350 degrees. In the summer months, I always use the toaster oven to avoid heating up the house.
  • Make sure to soak and rinse seeds and nuts, because they are usually very dirty with dust or dirt particles. Once soaked, rinsed and well drained, arrange them in a baking sheet. Put the baking sheet into the oven for 8-10 minutes, or until toasted and golden in color.
  • Turn off heat and remove from oven. Drizzle the seeds with maple syrup and sweet chili sauce. While seeds are still hot, toss with a small spatula or spoon to get all the seeds evenly coated. Return to hot oven for 10 more minutes, but without turning the oven on. Cool down. Garnish with fresh lime zest. Eat immediately.
