White Chocolate Bon Bons

Frozen White Chocolate Bon Bons...so perfect for the heat waves we live with during the summer months! If you can't have the fruit I include in the recipe below, simply swap it with other fruits, nuts, etc... Oh, and by the way, they're dairy-free, too!

You will need some type of molds, silicone molds work best because the bon bons pop right out and look prettier. You can also use muffin liners and a muffin tin.

Recipe makes 4 large or 8 small bon bons

How To

  1. Prepare the fruit and put it onto a plate or small baking sheet. Put it into the freezer for at least 15 minutes. Prepare the chocolate.
  2. In a small saucepan, melt the cacao butter and sugar together. Simply melt, do not allow it to reach a boil. Turn heat off. Whisk to blend. Sprinkle in the gelatin and whisk thoroughly to incorporate. Prepare your molds.
  3. After 15 minutes, remove fruit from the freezer. Whisk chocolate mixture again. Put equal amounts of fruit into your molds. Use your 1 tablespoon spoon to fill in the molds. Place in freezer for at least 45 minutes. Remove and eat immediately. Cover leftovers with plastic wrap or parchment paper. Leftovers can stay in the freezer for up to a week.
